Captain's log, Stardate: 06/10/2013...(lol can you tell I've just gone to see Star Trek: Into the Darkness for the second time :P Not that they use the Captain's log, but technicalities. lol XD)
So as it happens...the rest of my family and I believed yesterday to be Father's Day. lol And it wasn't until my mother called my grandpa to wish him a happy Father's Day that we found out, in fact, it is next weekend. Such is life! XD Of course, when my mother was calling my grandpa I was already 3/4 of the way through decorating a cake for my father.
SO NOW...

THE FATHER'S DAY CAKE!!! lol XD
Not my best work unfortunately, but I am a bit out of practice with full cakes as I have been primarily doing cupcakes for the past couple of years (They're easier for functions involving lots of hungry sorority members. ^-^) The music notes are because my dad is an extreme lover of music: he plays the organ, sings, plays the piano, and even this past year performed in an Operetta. ^-^
As I was a bit more focused on churning out a nice cake for my father, I did not, unfortunately, experiment with new ways to make cakes healthier for this particular endeavor. But soon. Soon, hopefully, I shall let the experimentation begin!!

Nutritionally Unsound
So after my first two posts of yummy delicious
looking cupcakes that are vibrant and colorful, I’d like to explain a little
bit about why I created this blog.
Baking has always been a hobby of mine and I love to
create beautiful cupcakes, cakes, and cookies with lots of color and beautiful
designs (which in most cases requires excessive frosting, sugar, candy, and
butter T-T). However, there is just one problem for me…I am a graduate from the
Department of Nutrition at Case Western Reserve University and knowing
everything that goes into my delicious creations I find that I never want to
eat them when they are finished. (This hasn’t been a problem yet as I have
plenty of people willing to eat them for me, but it would be nice to partake in
them too ^-^).
As my wonderful big from my sorority gave me two
books FULL of wonderful and creative cupcake ideas, I want to be baking and
making lots of beautiful creations over the next year. But, again there is my
dilemma of not wanting all that sugar and fat to enter my system…AND THUS this
blog was born.
I want to search for “Nutritionally Sound” solutions
to my sugar and fat problem without lowering the taste quality of the cupcake
or the ability of the frosting I use to make patterns and designs.
As there are so many creative things I still want to
do I will still be posting pictures of my “Nutritionally Unsound” cupcakes and
cakes, but will be using this blog as my quest for the perfect desserts: ones
that taste good but do not have nearly as much sugar and fat (and maybe even
have a few vegetables and fruits snuck in ^-^).
So begins my journey, and I hope that those of you
following along enjoy it with me! ^-^

Apples for my References and Teachers ^-^
So, I got two wonderful books on how to make all these cute little cupcakes from my big, Meaghan, in my sorority. This particular one was a monster and ended up being top heavy and crushing the cupcake beneath it. lol XD Oh, well. It was my first attempt at trying to make the cute little creations from this book. ^-^ Unfortunately, the monster apple cupcake looked the most apple-like...I'll just have to find a stronger cupcake batter next time. The lovely stems and leaves were brought to you by Andrea Morrison. ^-^ And aren't they lovely!!! :D Well, see ya next time! ^o^
